Best known for their old vine Utiel-Requena 'Cepas Viejas' red wine made from the increasingly impressive Bobal variety. Bobal is picked from old vines, destemmed and gently pressed before undergoing a long maceration at a controlled temperature with some pumping over. Malolactic fermentation takes place with the wine subsequenlty aged in new American and French ‘Allier’ barrels for a minimum of eight months.
