Les Anciens is produced from more than ninety year old goblet trained Carignan vineyards, made up of clay, limestone and sandstone. Fermented for eight days in concrete tanks and open wooden fermenters. Maceration over five weeks. Aged in concrete tanks and egg shaped tanks.
