The Jean-Claude and Didier Aubert Vouvray Moelleux is only made in vintages when the conditions for botrytised wine present themselves. Selected by triage when shrivelled by botrytis, Chenin Blanc is hand-harvested at optimum ripeness and vinified in small and distinct parcels according to their natural sugar levels.
